Lightened Up Blueberry Clafoutis

You know me, I love dessert. But i’m always looking for a way to put a lighter spin on a classic treat.  Enter the clafoutis (thanks Pinterest). What is this, you ask? A clafouis is a  French dessert containing berries that has a eggy batter. The thing about this dessert, though, is that its not very sweet. It gets all its sweetness from the fruit that’s baked into it. My recipe is adapted from this one here, but I made a few healthy substitutions!

Ingredients

  • 1/2 cup whole wheat flour
  • 1/4 cup oat flour
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 3 eggs
  • 1/2 cup stevia
  • 2 tbsp coconut oil
  • 1 tbsp lemon zest
  • 1 pint fresh blueberries (or any fruit you want!)

Directions

preheat oven to 350 degrees

coat a 9×9 baking pan with cooking spray; set aside

beat together eggs, coconut oil, stevia, vanilla and almond extracts , salt and lemon zest in a medium sized bowl

mix flours together in a separate bowl, then incorporate slowly into wet ingredients. Mix together until just combined

place the blueberries at the bottom of your baking pan

pour mixture over the berries. place in the oven and bake for 45 minutesIMG_4354

The result? Delicious. Now, i’m not just saying that. I made both versions of the clafoutis and everyone preferred the healthy version…even my mom (that’s saying something). Give it a try and I guarantee you’ll fall in love
