chicken fajita salad

I haven’t made this in a while and I’m not entirely sure why? It super easy and downright delicious! All it basically requires is some simple slicing and seasoning and its ready to roll. You could easily make these into wraps and it would be just as good, or serve it hot or cold. We chose to do salads today!

You’ll need:

3oz chicken, sliced

1 onion, sliced

3 bell peppers, sliced

1 tbsp olive oil

1/2 tsp chili powder

1/2 tsp chipotle chili powder

1/2 tsp cayenne pepper

1 tsp smoked paprika

1 tsp salt

For serving:

lettuce

avocado

salsa

tomato

cheddar cheese

Start by preparing your veggies. Slice 3 bell peppers and 1 onion and set aside in a bowl IMG_3739

Ready the chicken by slicing it into the strips. Then, mix the spices in a small bowl, and toss with the chicken.

In a pan, heat olive oil on medium high heat, and add the peppers and onions. Sauté until tender but be careful not to over cook. When they’re done, remove them from the pan. IMG_3741

Add the chicken and cook until done and no longer pink. Add the peppers and onions back in and stir until everything is coated in the seasoningsIMG_3744

Get all the toppings ready: dice your avocado and tomato! tomatoandavocado

To serve, make your bowl starting with lettuce. Layer with the chicken and veggies, then add some salsa. Top it with avocado, tomato and cheesefinished salad

Like I said, so good. Healthy, filling and fast. What more could you ask for?
